Paleo Java Chip Banana Muffins

Talk about delicious! These Java Chip Banana Muffins are a tasty and energizing way to start your day. This paleo recipe combines walnuts, cashews, coconut, espresso, and granola into one healthy breakfast treat.

 Paleo Java Chip Banana Muffins

Ingredients

  • 1 1/2 packets Java Chip Hot Cereal
  • 1 cup Forij Sunflower Seed Cacao granola
  • 1.5 tsp baking soda
  • 1 tsp apple pie spice
  • 3 small bananas, mashed
  • 2 eggs
  • 1/3 cup (dairy-free) chocolate chips
  • 1/4 cup unsweetened applesauce

 

Directions

1. Preheat oven to 375° F and grease a muffin tin (or use muffin tin liners)
2. Add the dry ingredients to a large bowl (hot cereal, granola, spice, baking soda) and mix to combine.
3. Add the wet ingredients (eggs, applesauce, bananas) and mix everything well until a batter forms.
4. Add the chocolate morsels and stir to combine.
5. Spoon the batter into the muffin tin (recipes makes 12 muffins) and bake for 25-30 minutes.
6. Remove from the oven and let cool!
