Triple Berry Coconut Energy Bites

Triple Berry Coconut Energy Bites

Fuel up for the day with these healthy and energizing bites! They're a moist and chewy snack that will keep you going all day long. Wholesome ingredients like chia seeds, flax seed meal, and our functional granola add important nutrients into this tasty recipe, while the dried blueberries, coconut, and honey keep things sweet and delicious.

 

Ingredients

  • 1 cup Forij Cinnamon Granola
  • 1/2 cup old fashioned oats, rolled
  • 1/4 cup golden flaxseed meal, ground
  • 1 tbsp chia seeds
  • 1/8 tsp sea salt, fine
  • 1/4 tsp cardamom, ground
  • 1/2 cup almond OR peanut butter, smooth
  • 1/4 cup honey
  • 1/2 tsp vanilla extract
  • 1/2 tsp coconut extract
  • 1/4 cup moist coconut flakes, sweetened
  • 1/4 cup dried blueberries

 

Directions

1. In a large mixing bowl, combine granola, oats, flaxseed meal, chia seeds, salt and ground cardamom.
2. Place the almond butter & honey in a microwave safe bowl or a saucepan. Heat in the microwave, or on stove top over low heat, until nut butter mixture is melted. Stir until smooth.
3. Add the vanilla and coconut extract to the melted nut butter mixture. Stir until smooth. Pour over the oat mixture and stir until well combined. Stir in the dried blueberries and coconut.
4. Scoop and press mixture firmly to make a round shape that holds together.
5. Place scoops onto parchment lined sheet trays. Cover trays with plastic wrap and refrigerate for several hours until well chilled. Place bites in an airtight container and keep refrigerated for up to 7 days OR bites can be frozen.
